Por su emplazamiento, dentro del ya desaparecido cerco amurallado, seguramente se halló la sinagoga y luego la mezquita, adaptada al culto cristiano en 1240.
Destacan en su interior el retablo renacentista. La capilla mayor, aloja el sagrario barroco. Aunque la portada de San Miguel, de 1544, es de transición del gótico al renacimiento, el resto del edificio, obra probable de Hernán Ruiz II, es claramente renacentista.
La estructura de la Iglesia Parroquial de San Mateo se incluye dentro de un paralelogramo regular salvo la Capilla del Sagrario y las dependencias.
Sus medidas son: Largo 44 metros y ancho 23 metros, los muros laterales 12 metros, las columnas 15 metros y la nave central 19 metros.Su planta es de cruz latina con tres naves que corren de este a oeste, flanqueadas por seis tramos de airosos pilares de piedra tallada en piezas y ánima de argamasa.
Estos pilares, cruciformes con baquetones adosados, sustentan la cubierta y separan las naves a través de una serie de arcos de ladrillo apuntados y enmarcados por un alfiz, punto de apoyo de la armadura mudéjar, de parhilera en la nave central y de molinera en las laterales, que aparece exenta de decoración salvo en las tirantas donde unos listones claveteados intentan una decoración de Yacería.
El crucero, cuyos cuatro arcos son de medio punto está cubierto por falsa bóveda de arista y tiene hermosa crucería formada por la prolongación de los baquetones que ascienden desde los pilares. Esta decoración incluye el techo del presbiterio pudiéndose apreciar entre los nervios, las pinturas al fresco que realizara Antonio Mohedano de la Gutierra.
